Ingredients (1 loaf):
Preheat oven to 350F and lightly oil loaf pan with coconut oil.
Place bananas, eggs, vanilla extract and maple syrup into blender and mix well.
In a mixing bowl, combine almond meal, baking powder, salt, cinnamon and nutmeg.
Pour the dry ingredients into the the blender and mix to combine.
Pour banana bread batter into the prepared loaf pan. Add raisins and blueberries and stir batter. Use a spoon to spread the batter evenly.
Bake for 45-50 minutes, or until the bread tests clean.
Remove the bread from the oven and allow to cool for 30 minutes.
Using a knife to completely separate the sides of the bread from the pan, flip the loaf onto a cutting board. Cut thick slices and enjoy!
Note: I love to smear my slices with almond butter or homemade chia jam : ) You can also make a sweeter version with chocolate chips or add walnuts or pecans for an extra crunch.
