Blueberry Swirl Pumpkin Bread

Ingredients (1 loaf):

  • 1/2 cup coconut flour

  • 1/2 cup almond flour

  • 1/2 cup ripe banana, mashed (at least 1 large banana)

  • 1/2 cup organic pumpkin puree

  • 1/2 cup almond butter

  • 4 organic eggs

  • 2 Tbsp raw honey (use 1/4 cup if you have a sweet tooth!)

  • 1 tsp baking soda

  • 1/2 tsp vanilla extract

  • 1/4 tsp salt

  • organic blueberries (optional)

  • walnuts, chopped (optional)

  • chia seeds (optional)

 

Directions:

  1. Preheat oven to 350F.

  2. In a large mixing bowl, combine the almond flour, coconut flour, baking soda and salt.

  3. Place the eggs, almond butter, honey, banana, pumpkin puree and vanilla extract in a blender. Slowly blend until you reach a smooth consistency.

  4. Pour the liquid ingredients into the dry ingredients and mix with a spoon until well combined. Add blueberries now if you are using them, mix the batter again.

  5. Pour the batter into a loaf pan greased with coconut oil. If using walnuts and chia seeds, sprinkle on top of the batter now.

  6. Bake in the oven for 45 minutes. 

  7. Let the bread cool for at least 10 minutes before slicing and serving. 

  8. For extra yumminess spread nut butter, jam or coconut butter on your slice. Enjoy!
