Summer Slaw

Ingredients:

  • 1/4 purple cabbage, grated

  • 1/4 green cabbage, grated

  • 2 large carrots, grated

  • 2 Tbsp fresh mint, chopped

  • 2 Tbsp fresh dill, chopped

  • 2 Tbsp fresh parsley, chopped

  • 2 Tbsp raisins

  • 3 Tbsp sunflower or pumpkin seeds, toasted

  • 1/4 cup EVOO

  •  juice of 3/4 lemon

  • 1 clove garlic, minced

  • dash of cinnamon

  • dash of cumin

  • dash of honey

  • black pepper

 

Directions:

  1. Mix EVOO, lemon juice, cinnamon, cumin, honey, garlic and black pepper in a glass to make dressing. Set aside.

  2. Add cabbage, carrots, raisins, mint, dill and parsley into a bowl. Pour dressing on top and toss.

  3. Toast seeds in a pan over low heat for 3 minutes. Sprinkle over salad and serve immediately. Enjoy!
