In a large pot saute onion and leek in olive oil on very low heat for 20 minutes.
Add broccoli and saute for 10 minutes.
Add vegetable stock and spices.
Bring soup to a boil. Reduce heat to a simmer and cover. Let soup simmer for about 5 minutes.
Blend soup in small batches until smooth and creamy. (I use a Vitamix)
Return soup to the pot and add any additional desired spices.
Eat as is or serve over brown rice topped with nutritional yeast and a sriracha drizzle.
