Simple Pesto

• 1/2 cup fresh basil leaves

• 1/2 cup fresh mint leaves

• 1/2 cup cashews

• 3 garlic cloves

• 1/2 cup olive oil

• sea salt and black pepper to taste



  1. Place basil, mint, cashews and garlic in a food processor and pulse until all ingredients form a pulp.

  2. Slowly add olive oil while pulsing, and continue to pulse until mixture is creamy. Enjoy over pasta or vegetables of your choice!
