Three Bean Salad

Ingredients:

• 1/4 cup cilantro 

• 1 15.5 oz can chickpeas, drained and rinsed 

• 1 15.5 oz can kidney beans, drained and rinsed 

• 1 15.5 oz can small white beans, drained and rinsed  

• 2 Tbsp olive oil 

• 2 Tbsp apple cider vinegar  

• 2 teaspoon capers 

• 6 cherry tomatoes, chopped

• 1 medium shallot, chopped  

• 2 cloves garlic, minced   

• 1 red bell pepper, chopped 

• salt and pepper to season 

• jalapeno, minced - optional 

 

Directions:

  1. Add cilantro, chickpeas, kidney beans, white beans, capers, cherry tomatoes, shallot, garlic and red bell pepper into a large mixing bowl.

  2. Drizzle olive oil and apple cider vinegar over the ingredients and mix until well combined.

  3. Season bean salad with salt and pepper. Top with jalapeno for an extra kick!
