Roasted Zesty Herb Salmon

Ingredients:

• 1 fillet of wild caught salmon

• 1 small handful parsley, finely chopped (*or any fresh herb of your choosing)

• 1/2 garlic clove, minced

• 1 teaspoon of olive oil

• juice of 1/2 of a lemon

• juice of 1/2 of a lime

• red pepper flakes

• sea salt

 

Directions:

  1. Preheat oven to 375°F.

  2. Combine parsley, garlic, olive oil, lemon, lime, red pepper, and sea salt in a small bowl.

  3. Spread some of the herb mixture over the salmon and rub in. Save some herb mixture for topping once cooked.

  4. Place salmon in oven. Cook for approximately 10-15 minutes (until fish is flaky -- I prefer mine medium rare so I cook it for ~10 minutes). If you like your salmon crispy, turn on broil for the last 2-3 minutes.

  5. Remove salmon from oven, plate, garnish with remaining sauce. Enjoy!
