Apricot Oatmeal Bars



Ingredients:

  • 1 1/2 cup oat flour

  • 1 cup rolled oats

  • 2 eggs

  • 3/4 cup oat milk, unsweetened

  • 1 teaspoon vanilla extract

  • 1/8 cup honey

  • 1 teaspoon baking soda

  • pinch of salt

  • 1 1/2 teaspoon cinnamon

  • 1 apricot, diced

  • 1/4 cup almonds, chopped

  • 1/4 cup pecans, chopped

  • 1/2 apricot, sliced

  • coconut oil

Directions:

  1. Preheat the oven to 350F.

  2. In a large mixing bowl, combine the oat flour, rolled oats, baking soda, a pinch of salt, and cinnamon. Set aside. These will be the dry ingredients.

  3. In a large mixing bowl, combine the eggs, oat milk, vanilla extract, and honey. These will be the wet ingredients.

  4. Combine both wet and dry ingredients and mix until thoroughly combined. You should have a batter consistency.

  5. Using a sharp knife, chop one apricot into small pieces and add these into the batter. Chop the almonds and pecans and add them as well.

  6. Grease a pyrex or cake pan with coconut oil and pour the batter.

  7. Top the batter with more sliced apricots, chopped pecans, and almonds. Place in the oven for about 35-40 minutes. You may check on the bars by inserting a knife in the middle, if the knife comes back clean, it means they are ready.

  8. Cut into bar shapes and drizzle some honey on top if desired.
