Black Bean Veggie Patties



Ingredients:

  • 2 cups cooked black beans, drained and rinsed

  • 1 medium carrot, shredded

  • 1/2 yellow onion, minced

  • 1 garlic clove, minced

  • 3 mini sweet bell peppers, diced

  • 1/2 Tbsp turmeric powder

  • 1 Tbsp onion powder

  • 1 Tbsp garlic powder

  • 1 Tbsp parsley, chopped

  • 4 teaspoon rolled oats

  • olive oil

  • salt, to taste

  • pepper, to taste

Directions:

  1. Preheat oven to 350F.

  2. Pour a small amount of olive oil into a pan and bring to medium high heat. Add chopped onion, mini sweet bell peppers, shredded carrot and minced garlic and sauté for a few minutes until the onion has a golden brown color.

  3. Using a food processor, pulse cooked black beans until you have a mixture. (Do not over pulse, there should be some black bean chunks visible).

  4. Pour the mixture into a large mixing bowl and add sautéed vegetables. Mix thoroughly. Add the rolled oats and keep mixing until well combined.

  5. To the mixture, add onion and garlic powder, turmeric powder and chopped parsley. Adjust to taste with salt and pepper.

  6. Using your hands, form small patties. (Add a small amount of olive oil to your hands to keep the dough from sticking to them).

  7. Place patties on a parchment lined baking sheet and bake them in the oven for about 20-25 minutes.
