Serves 2-3
Ingredients:
1 banana
2 eggs
1/2 cup nut milk
1 Tbsp maple syrup, optional
1 cup oat flour
1/2 cup blueberries
pinch of cinnamon, optional
coconut oil, for cooking
Directions:
In a large bowl, mash the banana.
Add the eggs, nut milk, and maple syrup, if using, into the bowl with the banana. Stir.
Once combined, add the oat flour and cinnamon. Stir.
Place a pan on medium heat. Once warm add the coconut oil to the pan.
Once the coconut oil is hot, but not smokey, add 1/4cup of the pancake mixture to the pan.
Place the blueberries on top of the pancake and flip after about 3 minutes. Repeat until the pancake mixture is used up.
Top with maple syrup, berries, nut butter, or any other toppings of choice.
