Fish Taco Bowls




Serves 2

Ingredients

  • 10-12 ounces of cod

  • 1 package of butter lettuce

  • ½ packet of taco seasoning

  • 1 cup fresh salsa

  • 4 tablespoons of fresh guacamole or 1 avocado

  • 2 tablespoons of greek yogurt (healthy swap for sour cream!)

  • 1-2 red bell peppers

  • 2 tbs extra virgin olive oil

  • Salt and pepper to taste

Directions:

  1. Heat up one tablespoon of olive oil over medium heat in a pan

  2. While the pan is heating up, season your cod with the taco seasoning

  3. Place the fish skin side down, and sear, for about 5 minutes or until skin is nice and crispy

  4. While cod is cooking, start to chop your peppers

  5. Gently flip the fish and cook for another 3 minutes

  6. Remove fish from pan and let rest

  7. While fish is resting, heat up another tablespoon of olive oil over medium heat

  8. Add peppers to pan and season with salt and pepper

  9. Cook for about 7-10 minutes or until fork tender



The assemble the bowl:

  1. Wash and lay down butter lettuce

  2. Add fish in center of bowl

  3. Add sautéed peppers

  4. Surround with your favorite toppings such as fresh salsa, guacamole, and greek yogurt! Enjoy!
