4 large portobello mushrooms
1/4 cup balsamic vinegar
2 Tbsp olive oil
1 Tbsp tamari
2 garlic cloves, minced
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
Black pepper to taste
1 (15-oz.) can cannellini beans, rinsed and drained
1 Tbsp lemon juice
2-3 large slices roasted red pepper
1 cup arugula
1/4 cup marinated artichokes
2 slices whole grain bread
Place the mushrooms into a large Ziplock bag or Tupperware with marinade ingredients. Marinade mushrooms for 20-30 minutes.
Grill the mushrooms for 4-5 minutes on each side until tender.
Next, make mashed lemon white beans by placing beans in a large bowl and mash with a fork. Add lemon juice to beans and combine.
Toast whole grain bread and assemble sandwich by spreading bread with mashed lemon white beans on each slice. Then top mushroom with roasted red pepper, arugula, and marinated artichokes.
