Pistachio Crusted Salmon

Serves 3-4


  • 3 x 6 oz salmon filets

Salmon Marinade

  • 1 Tbsp lime juice

  • 1 teaspoon olive oil

  • 1.5 teaspoons hot honey

  • 1 teaspoon dijon mustard

  • 1 garlic clove, minced

Pistachio Crust

  • 1 Tbsp grated Parmesan

  • 1 Tbsp lime zest

  • 1 Tbsp chopped dill

  • 1/4 cup gluten free panko crumbs or bread crumbs of choice

  • 1/4 chopped pistachios

  • 1/2 teaspoon pepper

  • 1/2 teaspoon salt


  1. Preheat the oven to 400 degrees F and line a small baking sheet with parchment paper.

  2. Pat the salmon filets dry with paper towels and place 1-2 inches apart on the baking sheet.

  3. In a small bowl, combine all the marinade ingredients until well combined. Spoon over the salmon evenly.

  4. In another medium bowl, combine all the coating ingredients until well combined. Spoon and pat the mixture evenly over the salmon filets until they are well coated.

  5. Bake the salmon for 10-14 minutes or until the salmon is cooked to your liking.

  6. Serve warm and enjoy!
