Sautéed Greens with White Beans & Roasted Mushrooms




Greens & White Bean Ingredients:

  • swiss chard or kale, washed and leaves removed from stem and roughly chopped

  • onion

  • shallot

  • olive oil

  • cherry tomato, cut in half

  • garlic powder

  • red chili flakes

  • salt and black pepper

  • 1 can of white beans, rinsed

  • lemon juice

  • shaved parmesan (optional)

Mushroom Ingredients:

  • shiitake mushroom caps

  • avocado oil

  • tamari

  • balsamic vinegar

  • garlic powder

  • onion flakes

  • ginger powder

  • black pepper

Directions:

  1. Preheat oven to 425 F.

  2. Place mushroom caps on a parchment-lined baking sheet and add oil, tamari, balsamic, garlic powder, onion flakes, ginger powder, and black pepper. Toss well. Roast until mushrooms are cooked through, about 25-30 minutes.

  3. Add olive oil to a sauté pan and then add chopped onion and shallot. Cook until translucent and then add chard, tomatoes, garlic powder, and chili flakes, Cook for another few minutes. Then add white beans, salt, and pepper. After everything is heated through, finish with lemon juice and parmesan.
