Preheat oven to 425 F.
With a fork, poke some holes into the sweet potato and place it in the oven for 40 minutes or until fork-tender.
On a pan, sauté corn kernels with a small amount of olive oil and black pepper to taste.
If using canned beans, wash and drain them, or if making them, proceed to cook the black beans.
Once the potato is fork-tender, let it rest for a few minutes and then scoop some of the insides out.
Stuff the sweet potato with the ground beef, black beans and corn.
Top with chopped lettuce and diced tomatoes.
