Tuna Salad Lettuce Cups
(1-2 servings)
1 can tuna of choice
1/2 shallot, minced
2 Tbsp cucumber, minced
2 Tbsp apple, minced
2 cherry tomatoes, chopped
1 Tbsp herbs, chopped
2 Tbsp light mayonnaise
1 Tbsp Greek yogurt
Juice of 1/2 a lemon
1 teaspoon red wine vinegar
1/2 teaspoon garlic powder
1 Tbsp dijon mustard
1 teaspoon capers
Salt and pepper to taste
Butter lettuce for serving
Combine all ingredients in a small bowl and mix until well combined. Spoon the tuna salad into lettuce cups and enjoy immediately!
