Veggie Bolognese

Serves 4-6


  • 1 lb of ground chicken

  • 1 tablespoon of extra virgin olive oil

  • 1 clove of garlic

  • any veggies you like (pick 2-3!): bell peppers, squash, zucchini, mushrooms, spinach, broccoli, etc

  • 3 cups of marinara sauce (I like Rao's Homemade)

  • salt

  • pepper


  • To prep, dice your veggies into small pieces

  • After veggies are diced, add 1 tablespoon of olive oil to your pan over medium heat

  • When oil and pan are warm (about 1-2 minutes), add the ground chicken, breaking it apart as it cooks

  • Once the chicken is cooked through, add your veggies (except spinach!)

  • Cover and let cook for 7-10 minutes

  • Once veggies are tender, add your sauce (and spinach if you used)

  • Add salt and pepper to taste

  • Bring sauce to a boil

  • Turn down the heat, and let simmer for 20-30 minutes covered

  • Enjoy over zucchini noodles or your favorite pasta
