
Serves 4-6
Ingredients:
1 lb of ground chicken
1 tablespoon of extra virgin olive oil
1 clove of garlic
any veggies you like (pick 2-3!): bell peppers, squash, zucchini, mushrooms, spinach, broccoli, etc
3 cups of marinara sauce (I like Rao's Homemade)
salt
pepper
Directions:
To prep, dice your veggies into small pieces
After veggies are diced, add 1 tablespoon of olive oil to your pan over medium heat
When oil and pan are warm (about 1-2 minutes), add the ground chicken, breaking it apart as it cooks
Once the chicken is cooked through, add your veggies (except spinach!)
Cover and let cook for 7-10 minutes
Once veggies are tender, add your sauce (and spinach if you used)
Add salt and pepper to taste
Bring sauce to a boil
Turn down the heat, and let simmer for 20-30 minutes covered
Enjoy over zucchini noodles or your favorite pasta
