Pumpkin Waffles

Ingredients (4 servings):

Wet:

  • 5 organic eggs

  • 2 ripe bananas

  • ¾ cup organic pumpkin puree

  • ¾ cup almond milk (I use unsweetened vanilla)

  • 2 Tbsp coconut oil

Dry:

  • ½ cup almond flour

  • ½ cup coconut flour

  • 1 Tbsp pumpkin pie spice

  • 1/4 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • 1 teaspoon baking soda

Toppings:

  • peanut butter

  • egg, fried

  • cherry tomatoes, sliced

  • maple syrup, as desired

Directions:

  1. Preheat waffle iron and spray with coconut oil.

  2. Combine all wet ingredients in a blender and blend until smooth.

  3. Add dry ingredients to blender and blend until combined.

  4. Pour batter into waffle iron. Cook waffles to desired doneness (usually take about 5 minutes).

  5. Smear waffles with peanut butter, top with 1 fried egg and warmed maple syrup. Serve with a side of sliced tomatoes. Enjoy!
