Nutty Zucchini Loaf

Ingredients
1.5 cups almond flour
1/2 cup tapioca flour
1/4 cup coconut flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 eggs
1/2 cup applesauce
2 Tbsp maple syrup
1 Tbsp apple cider vinegar
1.5 cups zucchini, grated
Directions:
Preheat oven to 350 F, and grease your loaf pan with coconut oil.
In a large bowl, add almond flour, tapioca flour, coconut flour, baking soda, cinnamon, and salt.
In a separate bowl, add eggs, applesauce, maple syrup, and apple cider vinegar. Whisk to combine.
Add grated zucchini to your wet ingredients. Stir to combine.
Combine the wet and dry ingredients in the large bowl, and mix very well.
Pour batter into the loaf pan. Bake in the oven for about 50 minutes. Enjoy!
