Shrimp and feta orzo


-1 lb shrimp

-1 tsp paprika

-1 tsp red pepper flakes

-1 tsp oregano

-1 tsp salt

-pepper, to taste

-4 Tbsp olive oil

-2 cloves garlic, minced

-3 cups swiss chard, chopped

-1.5 cups orzo

-2 cups bone broth

-1 cup water

-1/4 cup basil, chopped

-1/4 cup parsley, chopped

-1/4 cup kalamata olives

-3 oz feta

-1/2 lemon, juiced


1. Combine spices in a bowl, and mix with shrimp.

2. Add 2 Tbsp olive oil to pan, and cook shrimp a few minutes each side until cooked through. Remove from pan.

3. Add 2 Tbsp olive oil to pan, and add garlic.

4. Add Swiss chard, and sauté for a few minutes.

5. Add orzo to pan.

6. Add bone broth and water, and bring to a boil.

7. Simmer for 10 minutes.

8. Add kalamata olives, basil, and parsley.

9. Add shrimp back to pan.

10. Crumble feta on top.

11. Squeeze lemon juice over pan.

12. Enjoy!
