1 yellow onion, chopped
2 leeks, chopped
3 Tbsp olive oil
3 stalks broccoli, roughly chopped
3 cups vegetable stock
1 teaspoon red pepper flakes
1 teaspoon oregano
brown rice (optional)
nutritional yeast (optional)
In a large pot saute onion and leek in olive oil on very low heat for 20 minutes.
Add broccoli and saute for 10 minutes.
Add vegetable stock and spices.
Blend soup in small batches until smooth and creamy. (I use a Vitamix)
Return soup to the pot and add any additional desired spices.
Eat as is or serve over brown rice topped with nutritional yeast and a sriracha drizzle.
