Beet Dip


  • 3 medium beets

  • 1 garlic clove

  • ½ cup plain coconut yogurt (or yogurt of choice)

  • 3 tablespoons olive oil

  • 1 teaspoon maple syrup

  • 1 teaspoon lemon juice

  • sea salt


  1. Preheat oven to 350F.

  2. Cut beets into thin slices. Toss with 1 tbsp olive oil and place on parchment-lined baking sheet (can leave skin on or remove).

  3. Bake for 1 hour, then remove from oven and allow to cool slightly.

  4. Place beets and all additional ingredients in a food processor or blender and combine.

  5. Serve with a sprinkle of sea salt, crackers and crudite.
