Rice Paper Spring Rolls


• 3-4 pieces of rice paper

• carrots, shredded

• purple cabbage, shredded

• cucumber, sliced

• red bell pepper, sliced

• avocado, sliced

• romaine lettuce, shredded

• fresh cilantro, finely chopped

• fresh basil leaves, finely chopped


  1. Cut cucumbers, red pepper and avocado length-wise, in long strips and set aside.

  2. Fill a large bowl with enough warm water to be able to wet the rice paper.

  3. Place one piece of rice paper in the bowl or plate and let it soak to soften the paper (about 10-15 seconds).

  4. Place the rice paper on a cutting board or dry plate and layer all ingredients onto one side of the rice paper.

  5. Roll the rice paper and set aside. Repeat and enjoy. Highly reccomend dipping in my Thai Peanut Dressing!

Note: Option to lightly spray the vegetables with liquid aminos or tamari before rolling for a saltier flavor!
