Maple Mustard Cabbage with Crispy Quinoa

Ingredients:

• 1 green cabbage, sliced 

• 2 Tbsp avocado or olive oil 

• 1 Tbsp pure maple syrup 

• 1 Tbsp whole grain mustard

• 1/2 cup quinoa, cooked 

• sea salt 

• black pepper 

 

Directions:

  1. Preheat oven to 400°F. 

  2. Wash cabbage, and slice into 1/2-inch-thick slices. Remove any thick pieces of the core. 

  3. Place cabbage slices on a baking pan. 

  4. In a small bowl, combine oil, maple syrup, mustard, salt and pepper. 

  5. Drizzle oil mixture over cabbage and gently spread it out using a brush or back of a spoon. 

  6. Place in the oven for 35 minutes until golden brown. 

  7. While cabbage is in the oven, rinse the quinoa and then spread on a baking sheet. 

  8. Toast quinoa in the oven for 15-20 minutes, stirring 1-2x to avoid burning. Remove quinoa when it is crispy and toasted. 

  9. Sprinkle quinoa over cabbage before serving. Enjoy!
