Pantry Veggie Quinoa


• 1 cup quinoa

• 2 cups vegetable broth

• 1 medium white onion, chopped

• 2 garlic cloves, minced

• 1 small red bell pepper, chopped

• 3 carrots, peeled and chopped

• 1 cup broccoli florets, de-stemmed and chopped

• salt & pepper to season


  1. Make quinoa. Put quinoa and vegetable broth into a pot and bring to a boil. Once boiling, cover and simmer for 15 minutes.

  2. While the quinoa is simmering, sauté onion and garlic in olive oil in a pan. Add in carrots, bell pepper and broccoli (or whatever veggies you have). Sauté everything for about 5 minutes.

  3. Remove the pan from heat and add quinoa into the skillet. Mix all ingredients together. Option to top with any additional flavorings or sauces you enjoy, like nutritional yeast, cheese, sesame oil, tahini, tamari, harissa sauce, etc.
