• 1 head of cauliflower, cut into bite sized florets (about 6 cups)
• 1/2 yellow onion, sliced
• extra virgin olive oil
• 1/4 cup tahini
• 1/2 teaspoon turmeric
• 1/4 teaspoon paprika
• 1/4 teaspoon garlic powder
• juice of 1 lemon
• sea salt
• black pepper
Preheat oven to 375°F.
Line a baking sheet with parchment paper. Spread cauliflower and onion on baking sheet.
Drizzle with olive oil, sea salt, and black pepper.
Place in oven for approximately 20 minutes.
While cauliflower and onion are roasting, combine tahini, turmeric, paprika, garlic powder, lemon juice, 1 teaspoon of olive oil, sea salt, and black pepper in a small bowl.
Combine tahini sauce with cauliflower mixture on pan spreading evenly, then place back in the oven for 15 minutes.
Set oven to broil for an additional 1-2 minutes.
Remove from the oven and squeeze lemon juice on top of the cauliflower. Enjoy!
