Chopped Swiss Chard Salad with Pine Nuts, Raisins & Parmesan


• rainbow chard, chopped

• shallot, thinly sliced

• olive oil

• lemon juice and zest

• apple cider vinegar

• garlic, minced

• sea salt and black pepper to taste

• pine nuts, toasted

• raisins

• parmesan cheese

• balsamic glaze


  1. Prepare dressing by combining olive oil, lemon juice and zest, apple cider vinegar, garlic, salt, and pepper in a small bowl. Whisk well.

  2. Massage chopped chard and shallot with the dressing.

  3. Top with pine nuts, raisins, parmesan, and balsamic glaze. Enjoy!
