Recipe (serves 2)
1 cup rolled oats
1 banana
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 cup almond milk
2 Tbsp almond butter
1/2 cup frozen blueberries
To serve:
Dollop of yogurt
Cinnamon (optional)
Directions
Preheat the oven to 350F.
In a blender, blend all the ingredients together (except for the almond butter and frozen blueberries).
Pour the mixture into ramekins.
Top with a dollop of almond butter and push into the center. Also add some frozen blueberries
Bake for ~20 min, or until the middle is set.
Once finished cooking, spread a layer of yogurt on top. Sprinkle cinnamon over the top. Serve and enjoy!
