Almond Butter & Blueberry Baked Oats




Recipe (serves 2)

  • 1 cup rolled oats

  • 1 banana

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon ground cinnamon

  • 1 teaspoon baking soda

  • 1/2 cup almond milk

  • 2 Tbsp almond butter

  • 1/2 cup frozen blueberries

To serve:

  • Dollop of yogurt

  • Cinnamon (optional)

Directions

  1. Preheat the oven to 350F.

  2. In a blender, blend all the ingredients together (except for the almond butter and frozen blueberries).

  3. Pour the mixture into ramekins.

  4. Top with a dollop of almond butter and push into the center. Also add some frozen blueberries

  5. Bake for ~20 min, or until the middle is set.

  6. Once finished cooking, spread a layer of yogurt on top. Sprinkle cinnamon over the top. Serve and enjoy!
