Chocolate Chunk Banana Bread

Ingredients:


• 2 ripe bananas


• 1/2 cup Greek yogurt


• 1/4 cup maple syrup


• 1/4 cup melted coconut oil


• 1 tsp vanilla extract


• 1 cup einkorn flour or almond flour


• 1/2 tsp baking soda (or 1 tsp baking powder)


• Pinch of salt


• 1/3 cup chocolate chips



Instructions:


1. Preheat oven to 350°F.


2. Mash bananas in a bowl until smooth.


3. Mix in Greek yogurt, maple syrup, coconut oil, and vanilla.


4. Add flour, baking soda, and salt. Stir until just combined.


5. Fold in chocolate chips.


6. Pour into a lined or greased loaf pan.


7. Bake for ~40–50 minutes, until golden on top and set in the center.
