Ingredients:
1 ½ cup rolled oats
¼ cup toasted almonds (whole or flaked almonds)
2 Tbsp cacao powder
2 Tbsp maple syrup
2 Tbsp almond butter
1 Tbsp chia seeds
¼ cup water
Directions:
Add all ingredients (excluding the water) to a high-powered food processor. Pulse until well combined. You can choose to blend it until the nuts are completely chopped up, or until chopped into smaller pieces for a chunky texture.
Slowly add the water to the food processor until the mixture starts to combine. You may not need all of the water, so keep pulsing the mixture in between so that your mixture is not too wet. If the mixture is too wet, add more oats until the mixture holds together.
Roll the mixture into balls, and place in the fridge for at least 30 minutes to set. Store the energy bites in the fridge in an airtight container.
