Arugula & Watermelon Salad




Serves 2


Ingredients:

  • 4 large handfuls of spinach

  • 2 cups watermelon, cubed

  • 2 Tbsp chickpeas, or protein of choice

  • 1 1/2 Tbsp crumbled feta, optional

  • 1 Tbsp red onion, chopped

  • mint, to taste

Directions:

  1. Place all of the ingredients in a large bowl.

  2. Toss and serve with your favorite dressing (suggested: balsamic vinaigrette, lemon and oil).
