Serves 2
Ingredients:
4 large handfuls of spinach
2 cups watermelon, cubed
2 Tbsp chickpeas, or protein of choice
1 1/2 Tbsp crumbled feta, optional
1 Tbsp red onion, chopped
mint, to taste
Directions:
Place all of the ingredients in a large bowl.
Toss and serve with your favorite dressing (suggested: balsamic vinaigrette, lemon and oil).
