Back to School Granola Bars





Ingredients:


Dry:


  • 2 + 1/2 cup rolled oats

  • 1/4 cup pumpkin seeds

  • 1/4 cup sunflower seeds

  • 1/4 cup dried blueberries

  • 1/4 cup goji berries

  • 2 Tbsp hemp seeds

  • 2 Tbsp flax seeds

  • 1 Tbsp chia seeds

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt



Wet:

  • 1/2 cup almond butter (peanut butter, sunflower butter or tahini work well too)

  • 1/4 cup melted coconut oil

  • 1/3 cup maple syrup

  • 1 teaspoon vanilla extract



Directions:

  1. Preheat the oven to 350 degrees F and spread oats in a single layer on a sheet pan. Bake for 10 minutes until just golden.

  2. Prepare an 8 x 8 inch pan with parchment paper.

  3. In a large bowl, mix the toasted oats, pumpkin seeds, sunflower seeds, dried blueberries, goji berries, hemp seeds, flax seeds, chia seeds, cinnamon and salt together.

  4. In a separate bowl, whisk together the almond butter, coconut oil, maple syrup, and vanilla. Combine the dry and wet ingredients together.

  5. Add the granola mixture to the pan and press down firmly until flat and well distributed. Be sure to really press the granola mixture into the pan to make sure they stick together.

  6. Bake in a 350 degree oven for 12-15 minutes and allow the bars to cool before slicing.
