Baked Oatmeal









Serves 8-12

Ingredients

  • 1/2 cup coconut oil

  • 1/2 cup maple syrup

  • 1 mashed banana

  • 2 flax "eggs" (mix 1 tbsp flaxseed with 3 tbsp water for each egg) - optional to use real eggs

  • 1 cup of milk of your choice

  • 1 tsp vanilla extract

  • 3 cups of old-fashioned oats

  • 2 tsp baking powder

  • 1 tsp salt

  • 1 tsp cinnamon

  • Toppings (optional) blueberries, nut butter, honey, strawberries


Directions:

  1. Preheat oven to 350F.

  2. In medium bowl, whisk all the wet ingredients together.

  3. Add the dry ingredients, stir until combined.

  4. Pour into greased pan and bake for 25-30 minutes.
