Baked Stuffed Apples


  • 2 apples or pears (or do one of each!), cored

  • 2 tablespoons rolled oats

  • 3 tablespoons chopped walnuts and pistachios

  • 1-2 tablespoons chopped dates

  • 1/2 teaspoon or more of cinnamon

  • Dash of cardamom (optional)

  • 1/2 teaspoon rose water (optional)

  • 1-2 teaspoons maple syrup

  • Orange zest (optional)

  • Juice from 1 orange

  • 1 teaspoon butter or coconut oil


  1. Preheat oven to 375 degrees.

  2. Place cored apples in a pyrex or any baking dish.

  3. Combine oats, chopped nuts, dates, cinnamon, cardamom, rose water, maple syrup, and orange zest in a small bowl.

  4. Fill the apples with the mixture and then place the butter/coconut oil on top. Pour the orange juice into the bottom of the disk.

  5. Cover the disk with aluminum foil and bake for 25 minutes. Remove foil and cook for another 20-25 minutes or until apples are tender and filling is golden brown. Enjoy!
