Banana Baked Oatmeal



  • 2 ripe bananas

  • 2 eggs (can sub with flax eggs to make vegan)

  • 1 cup nut milk

  • 2 Tbsp maple syrup

  • 1/2 teaspoon vanilla extract

  • 1 banana, for topping


  • 2 cups gluten-free rolled oats

  • 2 Tbsp ground chia seeds

  • 1 teaspoon cinnamon

  • 1/2 teaspoon baking powder


  1. Preheat the oven to 350 degrees F.

  2. In a large bowl, mash the bananas. Add the eggs and whisk together.

  3. Once mashed and whisked, add the nut milk, maple syrup, and vanilla extract and mix all together.

  4. Add the oats, chia seeds, cinnamon, and baking powder.

  5. Pour the mixture into an 8x10 pan. Slice the third banana into coins and place over the mixture.

  6. Bake for 25 minutes. Let cool for 5 minutes before serving.

  7. Serve with coconut yogurt, fruit, and more!
