Banana Breakfast Cookies


  • 2 bananas, mashed

  • 1/2 cup almond butter

  • 1.5 cups rolled oats

  • 1/4 cup pumpkin seeds

  • 1/4 cup goji berries

  • 3 Tbsp chia seeds

  • 1 teaspoon cinnamon

  • Sprinkle of salt


  1. Preheat the oven to 350 degrees F. Prepare a baking sheet with parchment paper.

  2. Add mashed banana, almond butter and rolled oats to a bowl. Stir until well combined.

  3. Stir in pumpkin seeds, goji berries, chia seeds, cinnamon and salt to the mixture. Adjust taste to preference.

  4. Form dough into balls and flatten on baking sheet.

  5. Bake for about 15-20 minutes until golden brown and enjoy!
