Blueberry Zucchini Loaf







Ingredients:

  • 3/4 cup almond flour

  • 1/2 cup coconut flour

  • 1 teaspoon cinnamon

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon sea salt

  • 2 eggs, beaten

  • 1/2 cup coconut oil, melted

  • 2 teaspoons vanilla extract

  • 1 + 1/2 cup zucchini, shredded

  • 1/2 cup blueberries

  • 1/3 cup maple syrup

  • 1 cup walnuts, chopped

Directions:

  1. Preheat the oven to 350F. Prepare a loaf pan with parchment paper

  2. In a large bowl, combine the flours, cinnamon, baking powder, baking soda, and salt

  3. In a separate bowl, beat the eggs and coconut oil together. Then add vanilla extract, zucchini, blueberries and maple syrup

  4. Add the flour mixture to the creamed mixture until well combined. Fold in walnuts

  5. Pour mixture into prepared loaf pan

  6. Bake for 30-40 minutes or until a toothpick shows with no batter.
