Breakfast Tacos


  • 2 corn tortillas

  • 2 eggs

  • 1 teaspoon olive oil

  • salt and pepper to taste

  • 1 cup spinach

  • 1 Tbsp cheese of choice

  • 1/4 avocado

  • 2 Tbsp salsa


  1. Add olive oil to a pan over medium heat. Once the pan is hot (2-3 minutes), crack both the eggs and cook in your desired fashion. Season with salt and pepper. Add cheese during the last 30 seconds of cooking.

  2. Over and open flame using tongs, toast your tortillas for 30 seconds on each side until pliable and lightly charred.

  3. Divide the eggs between the tortillas.

  4. In the same pan for the eggs, add the spinach and more oil if needed. Sauté until wilted.

  5. To assemble, add the spinach, sliced avocado, and salsa to the tortillas with the eggs and enjoy!
