Recipe (serves 2)
1/2 cup rolled oats
1 large carrot, grated
2 medjool dates, finely chopped
1/2 teaspoon ground cinnamon
2 Tbsp chia seeds
1 cup water
1 cup almond milk
1/2 teaspoon vanilla extract (optional)
1/2 cup Greek yogurt (optional)
Handful of walnuts (or any nut)
Sprinkle of cinnamon
1/4 cup goji berries (optional)
Drizzle of maple syrup
In a saucepan, add all the oatmeal ingredients. Bring to a boil and then reduce heat to a simmer for 10-15 minutes until all the liquid has been absorbed. If it gets too dry, add a splash more almond milk.
Serve the oatmeal with a dollop of Greek yogurt, nuts, berries, cinnamon & maple syrup and any other toppings you desire. Enjoy!
