Carrot Cake Oatmeal

Recipe (serves 2)


  • 1/2 cup rolled oats

  • 1 large carrot, grated

  • 2 medjool dates, finely chopped

  • 1/2 teaspoon ground cinnamon

  • 2 Tbsp chia seeds

  • 1 cup water

  • 1 cup almond milk

  • 1/2 teaspoon vanilla extract (optional)

To serve:

  • 1/2 cup Greek yogurt (optional)

  • Handful of walnuts (or any nut)

  • Fresh berries

  • Sprinkle of cinnamon

  • 1/4 cup goji berries (optional)

  • Drizzle of maple syrup


  1. In a saucepan, add all the oatmeal ingredients. Bring to a boil and then reduce heat to a simmer for 10-15 minutes until all the liquid has been absorbed. If it gets too dry, add a splash more almond milk.

  2. Serve the oatmeal with a dollop of Greek yogurt, nuts, berries, cinnamon & maple syrup and any other toppings you desire. Enjoy!
