Carrot Cake Overnight Oats




Ingredients:

  • 1/2 cup old-fashioned rolled oats

  • 1 Tbsp chia seeds

  • 1/4 cup shredded carrot

  • 2 Tbsp walnuts or pecans

  • 1/2 date, chopped

  • dash of cardamom

  • heaping 1/4 teaspoon cinnamon

  • 1 1/4 cup liquid such as coconut water, almond milk, or a mix

Directions:

  1. Place all ingredients into a large glass container and mix well until combined.

  2. Refrigerate overnight. In the morning, stir well and add more liquid if necessary.

  3. Add desired toppings and enjoy!
