1/2 cup old-fashioned rolled oats
1 Tbsp chia seeds
1/4 cup shredded carrot
2 Tbsp walnuts or pecans
1/2 date, chopped
dash of cardamom
heaping 1/4 teaspoon cinnamon
1 1/4 cup liquid such as coconut water, almond milk, or a mix
Place all ingredients into a large glass container and mix well until combined.
Refrigerate overnight. In the morning, stir well and add more liquid if necessary.
Add desired toppings and enjoy!
