Carrot Muffins


  • 2 eggs

  • 1/8 cup liquid coconut oil

  • 1/2 teaspoon vanilla extract

  • 1/8 cup honey

  • 1/4 cup almond milk

  • 1 cup shredded carrot

  • 1 cup oat flour

  • 1/2 cup almond flour

  • 1 teaspoon cinnamon

  • 1/2 teaspoon baking soda

  • chopped pecans


  1. Preheat oven to 350F.

  2. In a mixing bowl, combine eggs, coconut oil, vanilla extract and honey. These will be the wet ingredients.

  3. In a separate mixing bowl, combine almond flour, oat flour, baking soda and cinnamon. These will be the dry ingredients.

  4. Start adding the dry ingredients to the wet ingredients little by little until everything has been added. Then, add the shredded carrot and keep mixing until you have a batter. Lastly, add the almond milk.

  5. Place batter into baking cups and sprinkle some chopped pecans on top.

  6. Bake in the oven for about 25 minutes. Remove and let them cool for a few minutes before eating.
