Ingredients:
1 cup oat flour
1/2 teaspoon baking soda
a pinch of salt
1 medium carrot, peeled and grated
3/4 cup almond milk
1 egg
1 1/2 teaspoon honey
1 1/2 teaspoon liquid coconut oil
1/2 teaspoon vanilla extract
1 teaspoon cinnamon
1 Tbsp Greek yogurt
1 Tbsp almond milk
cinnamon, to taste
unsweetened shredded coconut, optional
chopped almonds, optional
chopped walnuts, optional
Directions:
Peel and grate a medium carrot on the fine side. Set aside.
In a large mixing bowl, combine oat flour, baking soda, salt, and cinnamon. Set aside. These will be the dry ingredients.
In another mixing bowl, whisk together almond milk, egg, honey, liquid coconut oil, and vanilla extract. Whisk thoroughly. These will be the wet ingredients.
Add the dry ingredients to the wet ingredients while whisking them to avoid clumps from forming. To this batter, add the grated carrot and combine.
Spread some coconut or avocado oil on the waffle maker to avoid from sticking to it.
Pour the batter evenly and cook each waffle for about 5 minutes. This recipe yields 4 medium waffles.
In a small bowl, combine greek yogurt, honey, almond milk and cinnamon. This is going to be a glaze.
Top the waffles with the greek yogurt glaze, unsweetened shredded coconut and some chopped almonds and walnuts if desired.
