1 head cauliflower, cut into small florets
1 parsnip, peeled and cut into small pieces
1 small potato, peeled and cut into small pieces
2 cloves garlic, roughly chopped
1 tablespoon unsalted butter (or plant-based butter)
1-2 tablespoons olive oil
salt and pepper to your liking
Place cauliflower florets, parsnip, potato, and garlic in a large pot. Add enough water to cover the bottom 1-1.5 inches of the pot. Put the lid on, bring to a boil, lower and cook until all the vegetables are tender, about 20 minutes. You should be able to stick and release a knife from the vegetables easily.
Once the veg is cooked, if you feel like there is too much water, remove some since we will be blending the remaining liquid with the veg and remaining ingredients.
Add butter, olive oil, salt, and pepper and mix.
Use an immersion blender to mash or blend in a vitamix.
Taste and adjust for seasoning.
