Ingredients:
2 chicken breasts, diced
1 tablespoon olive oil
1/2 cup (1/2 small) white onion, chopped
1 teaspoon minced garlic
1/2 cup green bell pepper, chopped
1/2 cup red bell pepper, chopped
3 tablespoons soy sauce/tamari/coconut aminos
1/2 cup pineapple, chopped
1 teaspoon sesame oil
1 tablespoon manuka honey
1 teaspoon sesame seeds, more for topping
green onion, for garnishing
lime, for serving
Directions:
Heat pan on medium heat.
Add olive oil, onion, garlic, and chicken breast.
Cook chicken until no longer pink.
Add the bell peppers, sesame oil, and 2 tbsp of tamari.
Cook on medium-high heat and cover for about 5 minutes, mixing periodically to avoid burning.
Add the pineapple, honey, sesame seeds, and 1 tbsp of tamari.
Simmer for about 2 minutes and move to serving dish.
Garnish with sesame seeds and green onion.
Serve on butter lettuce wraps with a side of lime and enjoy!
