Chicken Lettuce Wraps




Ingredients:

  • 2 chicken breasts, diced

  • 1 tablespoon olive oil

  • 1/2 cup (1/2 small) white onion, chopped

  • 1 teaspoon minced garlic

  • 1/2 cup green bell pepper, chopped

  • 1/2 cup red bell pepper, chopped

  • 3 tablespoons soy sauce/tamari/coconut aminos

  • 1/2 cup pineapple, chopped

  • 1 teaspoon sesame oil

  • 1 tablespoon manuka honey

  • 1 teaspoon sesame seeds, more for topping

  • green onion, for garnishing

  • lime, for serving

Directions:

  1. Heat pan on medium heat.

  2. Add olive oil, onion, garlic, and chicken breast.

  3. Cook chicken until no longer pink.

  4. Add the bell peppers, sesame oil, and 2 tbsp of tamari.

  5. Cook on medium-high heat and cover for about 5 minutes, mixing periodically to avoid burning.

  6. Add the pineapple, honey, sesame seeds, and 1 tbsp of tamari.

  7. Simmer for about 2 minutes and move to serving dish.

  8. Garnish with sesame seeds and green onion.

  9. Serve on butter lettuce wraps with a side of lime and enjoy!
