Chicken Veggie Stir Fry

Serves 4


  • 1 lb chicken breasts

  • 1 tbsp of extra virgin olive oil

  • ¾ cup coconut aminos (teriyaki)

  • 1 orange bell pepper

  • 1 yellow bell pepper

  • 1 head of broccoli

  • 1 can of baby corn


  1. Cut up your chicken breast into cube sized pieces

  2. Add a tablespoon of extra virgin olive oil over medium heat

  3. Once warm, add chicken pieces and cook for 7-10 minutes or until cooked through, stirring occasionally

  4. While chicken is cooking, start chopping your vegetables

  5. Add veggies to pan with chicken, top pan with lid, and let cook for about 5-7 minutes or until fork tender

  6. Add your coconut aminos and mix all of your ingredients together

  7. Put the lid on, and let simmer for 10-20 minutes

  8. Add salt and pepper to taste, and enjoy!

*Option: serve over brown rice!*
