Serves 4
Ingredients:
1 lb chicken breasts
1 tbsp of extra virgin olive oil
¾ cup coconut aminos (teriyaki)
1 orange bell pepper
1 yellow bell pepper
1 head of broccoli
1 can of baby corn
Directions:
Cut up your chicken breast into cube sized pieces
Add a tablespoon of extra virgin olive oil over medium heat
Once warm, add chicken pieces and cook for 7-10 minutes or until cooked through, stirring occasionally
While chicken is cooking, start chopping your vegetables
Add veggies to pan with chicken, top pan with lid, and let cook for about 5-7 minutes or until fork tender
Add your coconut aminos and mix all of your ingredients together
Put the lid on, and let simmer for 10-20 minutes
Add salt and pepper to taste, and enjoy!
*Option: serve over brown rice!*
