Chickpea Smash Lettuce Cups


  • 1/2 cup chickpeas (drained and rinsed if from a can)

  • 2 tablespoons yogurt (I used @cocojune_organic unsweetened coconut yogurt)

  • 1/4 mashed avocado

  • 1 tablespoon dijon mustard

  • 1 tablespoon chopped cilantro (or basil)

  • Juice of half a lemon

  • 1/4 teaspoon of honey

  • 1/4 teaspoon of sriracha

  • Salt, pepper, garlic powder to taste

  • Cherry tomatoes, sliced (for topping)


  1. Add all the ingredients to a bowl and mash together with a fork until combined with some chunks of chickpeas.

  2. Spoon the mixture onto some romaine lettuce cups or a piece of toast, and top with cherry tomato slices or any other favorite raw veggie or herb.

  3. Enjoy!
