1/2 cup chickpeas (drained and rinsed if from a can)
2 tablespoons yogurt (I used @cocojune_organic unsweetened coconut yogurt)
1/4 mashed avocado
1 tablespoon dijon mustard
1 tablespoon chopped cilantro (or basil)
Juice of half a lemon
1/4 teaspoon of honey
1/4 teaspoon of sriracha
Salt, pepper, garlic powder to taste
Cherry tomatoes, sliced (for topping)
Add all the ingredients to a bowl and mash together with a fork until combined with some chunks of chickpeas.
Spoon the mixture onto some romaine lettuce cups or a piece of toast, and top with cherry tomato slices or any other favorite raw veggie or herb.
