Chocolate Chunk Carrot Muffins


Ingredients:

DRY

  • 1 cup oat flour

  • 1/2 cup almond flour

  • 1 teaspoon cinnamon

  • 1/2 teaspoon baking soda

  • 1 cup shredded carrot

  • chopped walnuts

  • dark chocolate chips

WET

  • 2 eggs

  • 1/8 cup liquid coconut oil

  • 1/2 teaspoon vanilla extract

  • 1/8 cup maple syrup

  • 1/4 cup almond milk

Directions:

  1. Preheat oven to 350 degrees F.

  2. In a mixing bowl, combine eggs, coconut oil, vanilla extract and maple syrup. These will be the wet ingredients.

  3. In a separate bowl, combine almond flour, oat flour, baking soda and cinnamon. These will be the dry ingredients.

  4. Start adding the dry ingredients to the wet ingredients little by little until everything has been added. Then, add the shredded carrot and dark chocolate, keep mixing until you have a batter. Lastly, add the almond milk.

  5. Place batter into baking cups and sprinkle some chopped walnuts on top.

  6. Bake in the oven for about 25 minutes. Remove and let them cool for a few minutes before eating.
