Chocolate Chunk Carrot Muffins

Ingredients:
DRY
- 1 cup oat flour 
- 1/2 cup almond flour 
- 1 teaspoon cinnamon 
- 1/2 teaspoon baking soda 
- 1 cup shredded carrot 
- chopped walnuts 
- dark chocolate chips 
WET
- 2 eggs 
- 1/8 cup liquid coconut oil 
- 1/2 teaspoon vanilla extract 
- 1/8 cup maple syrup 
- 1/4 cup almond milk 
Directions:
- Preheat oven to 350 degrees F. 
- In a mixing bowl, combine eggs, coconut oil, vanilla extract and maple syrup. These will be the wet ingredients. 
- In a separate bowl, combine almond flour, oat flour, baking soda and cinnamon. These will be the dry ingredients. 
- Start adding the dry ingredients to the wet ingredients little by little until everything has been added. Then, add the shredded carrot and dark chocolate, keep mixing until you have a batter. Lastly, add the almond milk. 
- Place batter into baking cups and sprinkle some chopped walnuts on top. 
- Bake in the oven for about 25 minutes. Remove and let them cool for a few minutes before eating.
