Choline Focused Stir Fry

Ingredients:

  • 1/2 cup brown rice, uncooked

  • 3 Tbsp vegetable oil

  • 1 cup broccoli, chopped

  • 1 ear corn

  • 1/2 cup edamame

  • 1/4 cup green peas

  • 1/2 cup red bell pepper, chopped

  • 2 Tbsp coconut aminos

  • 1 teaspoon rice wine vinegar

  • 1/2 teaspoon toasted sesame oil

  • 2 eggs, scrambled

  • Sesame seeds and peanuts for garnish

Directions:

  1. Prepare brown rice according to package.

  2. Heat 2 Tbsp oil in pan over medium heat. Cook broccoli, corn, edamame, green peas and bell pepper until vegetables are cooked and tender, about 5-10 minutes.

  3. Add coconut aminos, rice wine vinegar and toasted sesame oil to vegetables and stir all together. Adjust taste as needed.

  4. Transfer vegetable mixture to a separate plate and set aside.

  5. To the same pan, add remaining vegetable oil over medium heat.

  6. Scramble eggs in a separate bowl and add to pan. Cook eggs until just cooked through.

  7. Finally, add scrambled eggs to vegetable mixture and top with sesame seeds and peanuts.

  8. Enjoy with your choice of protein!
