1/2 cup brown rice, uncooked
3 Tbsp vegetable oil
1 cup broccoli, chopped
1 ear corn
1/2 cup edamame
1/4 cup green peas
1/2 cup red bell pepper, chopped
2 Tbsp coconut aminos
1 teaspoon rice wine vinegar
1/2 teaspoon toasted sesame oil
2 eggs, scrambled
Sesame seeds and peanuts for garnish
Prepare brown rice according to package.
Heat 2 Tbsp oil in pan over medium heat. Cook broccoli, corn, edamame, green peas and bell pepper until vegetables are cooked and tender, about 5-10 minutes.
Add coconut aminos, rice wine vinegar and toasted sesame oil to vegetables and stir all together. Adjust taste as needed.
Transfer vegetable mixture to a separate plate and set aside.
To the same pan, add remaining vegetable oil over medium heat.
Scramble eggs in a separate bowl and add to pan. Cook eggs until just cooked through.
Finally, add scrambled eggs to vegetable mixture and top with sesame seeds and peanuts.
