Coconut Curry

Serves 4


  • 1 can full fat coconut cream

  • 1 medium sweet potato cubes

  • 1 cup chopped broccoli (add any extra veg you'd like!)

  • 1 tbsp curry powder

  • 1 tbsp chopped fresh basil

  • 1 inch piece chopped ginger

  • sea salt to taste

  • 2 cups of brown rice

Directions for curry:

  1. Preheat oven to 450 F and roast chopped sweet potato for 20 minutes.

  2. On medium heat, sauté broccoli, ginger, and basil for

5-7 minutes.

  1. Add coconut cream to the pan and the roasted sweet potato.

  2. Add in the curry powder and salt.

  3. Cook on medium heat for 5 minutes then let it cool.

  4. For the rice, follow the directions on the box.

  5. Add brown rice and curry to a bowl. Pour extra sauce over and add any of your favorite fresh herbs.

Yum! Making this tonight with extra veg (cauliflower, zucchini, carrot, bell pepper) and chicken.
