Serves 4
Ingredients
1 can full fat coconut cream
1 medium sweet potato cubes
1 cup chopped broccoli (add any extra veg you'd like!)
1 tbsp curry powder
1 tbsp chopped fresh basil
1 inch piece chopped ginger
sea salt to taste
2 cups of brown rice
Directions for curry:
Preheat oven to 450 F and roast chopped sweet potato for 20 minutes.
On medium heat, sauté broccoli, ginger, and basil for
5-7 minutes.
Add coconut cream to the pan and the roasted sweet potato.
Add in the curry powder and salt.
Cook on medium heat for 5 minutes then let it cool.
For the rice, follow the directions on the box.
Add brown rice and curry to a bowl. Pour extra sauce over and add any of your favorite fresh herbs.
Yum! Making this tonight with extra veg (cauliflower, zucchini, carrot, bell pepper) and chicken.
