Coconut Date Granola


  • 2 cups rolled oats

  • 1 cup pepitas

  • 1 cup coconut flakes

  • 6 dates, chopped

  • 1/2 tsp cinnamon

  • 1/4 tsp salt

  • 1/4 cup coconut oil

  • 1/4 cup maple syrup

  • 1 tsp vanilla extract


  1. Preheat oven to 350 degrees and line a large baking sheet with parchment paper.

  2. In a large mixing bowl, combine oats, pepitas, coconut flakes, dates, cinnamon, and salt.

  3. Melt coconut oil, and combine with maple syrup and vanilla extract. Add to mixing bowl, and stir to coat. Pour granola mixture over baking sheet evenly.

  4. Bake for around 20 minutes, tossing halfway through.

  5. Let granola cool completely before storing in an airtight container.

  6. Enjoy!
